Years ago, my mother came across this recipe, and it has appeared at all family gatherings ever since. After my mother passed away, I took up the tradition, which my children simply refer to as “that green thing Grandma used to make.”
“Salad” is probably not an apt description because while it’s green, it is so because of pistachio pudding – no leafy plants need apply.
This is my own variation. The ones you find on the side of a pudding box is too sweet for me, and so I cut it by doubling the whipped topping:
1 4-oz box of pistachio pudding
1 20-oz can of crushed pineapple
1 cup mini-marshmallows
1/2 cup chopped nuts (like pecans)
3 cups thawed whipped topping
Mix the first four ingredients together and then fold in the whipped topping. It is best to let it set for a while in the fridge before serving.
